The Hispellum farms olive trees are located on Spello's hills, along the road that leads to the old Collepino Castle, and close to the Vallegloria Monastery. It is a mystical environment rich in history and heritage, which inspired the colours and landscapes of the Renaissance painter Pinturicchio. The olive trees grow in an area of 50 hectares facing east, at an altitude between 400 and 500 metres above sea level, providing a very high level of sun on the area.
The land is rich in red stone, ideal conditions to develop an excellent quality oil, with natural antioxidants, all grown without chemicals.The type of tree grown in our land is uniquely the moraiolo . Olives are still nowadays hand picked, then loaded in aired containers and brought to the mill where they are stored prior to the pressing away from heat at a temperature between 14 and 20 degrees C. The pressing is performed within eight hours of the harvest in cold conditions. The oil is then stored in stainless steel containers, in a modified environment (Nitrogen).
The excellence of our product is certified Dop Umbria Colli Assisi Spoleto, in organic conversion from 25 September 2008, in biodynamic conversion from June 2010 and controlled by Agribio, Kosher and P. The extra virgin olive oil from oil campaign 2010/11 will be certified NOP USDA. The company is a member of Symbola, Foundation of Italian Quality.
